This past summer brought about the beginning of a new obsession: the homemade latte. While I love the taste of coffee, I didn’t drink it much until recently because the acidity in your typical hot cuppa joe bothered my stomach. For some reason iced coffees never bothered me, though, and when I found out that cold brew cuts the acidity out of the coffee equation, the ease with which I could down an iced latte began to make sense. Buying iced lattes from coffee shops got expensive real quick though, so I would limit myself to about 1 a week. But this summer I discovered how easy and cost effective it was to make cold brew at home with my KitchenAid® Cold Brew Coffee Maker, and I started having it every day in the morning. It makes a big batch at once that lasts me for about a week, and even the process of “making” it is pretty much the easiest thing ever. Step 1, grind beans. Step 2, add beans to strainer in cold brew maker. Step 3, add water. Step 4, refrigerate and wait 12 – 24 hours. The end! The actual maker has a tap on the front that you twist to get the cold brew to come out of, so you don’t even need to take it out of the refrigerator save for cleaning it, and it doesn’t require any electricity either so it’s perfect for taking on camping trips, too!
I’ve got to say, having that extra zip in your step first thing in the morning feels pretty fantastic, and I finally understand why Jeremy isn’t able to start the day without a nice big cup full of it. I take my cold brew with a whoooole lot of milk (if you couldn’t tell from my continuous use of the word “latte”), and a little sweetener like honey or syrup. My favorite sweetener is a homemade vanilla bean simple syrup, and I have the recipe for it here for you guys. Again, this is super simple to make; just some sugar, water, and vanilla bean simmered together. You could strain it if you want, but I prefer to leave all the vanilla bits and the bean husk in the syrup when I store it so that it continues to infuse with vanilla goodness over time.
