Yes folks, another post with avocados. They were on sale for $1 each when I decided to make the avocado fries, so I picked up another one with the hope of making some sort of salad with it. I’m trying to eat healthier, which translates to eating more vegetables. It’s kind of difficult because I’m not the biggest salad fan, as you could probably tell because I’ve only posted about them once, and it wasn’t as “healthy” as it could have been.
….I may have put chocolate in the dressing.
And then I put bacon in this one. So you can see where I’m struggling with this whole “eat better” thing. But even though they’re not the healthiest salad choices, there are still vegetables in them. Plus it’s just much more fun to eat a salad when you have nice fatty treats hidden inside, like bacon and avocado. It’s like a treasure hunt!
Bacon Avocado Salad with Bacon Dripping Dressing
Ingredients
- 1 Avocado cut into 2-inch chunks
- 4 Slices Uncured Apple-Smoked Bacon
- 1 Tomato cut into 2-inch chunks
- 1 Cucumber peeled and sliced
- 2 Tablespoon Fresh Cilantro chopped
- 1 Tablespoon Olive Oil
- Salt & Pepper
Instructions

Heat the olive oil in a medium sized frying pan over medium heat. Add the bacon and grill, flipping every few minutes, until they are nice and crispy. Remove the bacon from the pan and reserve the drippings inside the pan. Break the bacon into roughly 2-inch squares and set them aside.

In a medium-sized bowl, mix together the cucumbers, tomatoes and cilantro. Then gently stir in the bacon and avocado, taking care not to crush the avocado chunks as they are very soft. Drizzle the drippings from the pan over the salad. Add salt and pepper to taste.
What a droolworthy combination of flavors! That salad is magnificent.

This looks so delicious. I make a similar salad and sometimes I throw in chopped mozzarella and granny smith apples. Also, a restaurant I went to once served a similar salad with a "Bloody Mary" dressing. It was so good. I'm trying hard to recreate it, but no luck so far.

hi eva, there's nothing really wrong putting in some 'hidden treasures' unless we are 100% vegetarian or meat allergic, this looks very good to me!
Very interesting dressing, beautiful salad..
I'm mostly vegetarian now, but you know pepperoni and bacon were oddly some of the last meat foods I gave up and the smell of bacon still appeal to me. My boyfriend though is an unabashed carnivore and would love to have a big plate of this hearty salad!
Avocados are my one of my favourite things to eat, I have them a few times a week. Bacon and avocado go really well together as well, I usually make BLTs with avocado.

@Emma: Agreed, a BLT with Avocado is delicious. I had one before at a restaurant and it was AMAZING, I should try and make one at home.
The pictures look very inviting! I like the balance – all the awesome veggies balance the bacon. I'm curious to know, for vegetarians (not me, but I have friends who are), would it still taste good without the bacon? Or is there some kind of substitute?

@Kartik:It would still be tasty without the bacon. I would, however, create a different dressing with 4 teaspoons of olive oil, 2 teaspoons of white vinegar, 1/2 teaspoon oregano, and 1 teaspoon fresh dill, finely chopped. If they're not vegan, they should crumble some feta over it too and make it Greek-style š

How many servings does this make?
One big serving or two small ones, depends on how much you can eat! š Just read through the ingredients and see if it sounds like it would be too much or too little for you to eat by yourself. This made two servings for me, but I am petite and always eat smaller portions than most people.
I seriously love everything about this (who wouldn't?). And that dressing is absolute heavenly!

I have a similar recipe to this only mine has some fresh squeezed lime juice and sliced red onion…pair that with all these ingredients and it is amazing!
I would think you would have to serve this right away in that refrigerating it would solidify the bacon grease.
