Homemade Vanilla Pepita Granola

  • 1/4 cup honey
  • 1/4 cup plus 1 tablespoon coconut oil (slightly warm so it's in liquid state)
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup Kashi GoLean Clusters Vanilla Peptita cereal
  • 1 1/2 cup rolled oats
  • 1/2 cup sliced almonds
  • 1/2 cup raw cashews
  • 1/4 cup raw brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon flake sea salt


  1. Preheat the oven to 300 degrees Fahrenheit. Mix together all of the ingredients in a large bowl. Spread the mixture out on a baking sheet lined with parchment paper. Place the pan in the oven and bake for 20 minutes. Remove it from the oven, then stir the mixture every 5 minutes on the pan the first 20 minutes as it cools. Once cooled to room temperature, transfer to an air-tight container. Will keep for 1 month.
