Baked Pumpkin, Cranberry, & Raspberry Oatmeal With Vanilla Creme Fraiche

Ingredients

  • 1 cup milk
  • 3/4 cup pumpkin puree
  • 2/3 cup Vermont Creamery vanilla creme fraiche
  • 1/2 cup honey
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 3 cups oats
  • 1/4 cup sliced almonds
  • 1/4 cup fresh cranberries
  • 1/4 cup fresh raspberries

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. In a large bowl, mix together the milk, pumpkin puree, honey, 1/3 cup of creme fraiche, egg, vanilla extract, and cinnamon until smooth. Stir in the oats, almonds, cranberries, and raspberries until evenly distributed.
  2. Pour into an oven-safe dish and bake for 30-40 minutes, or until the top of the oatmeal is lightly crisp and the oatmeal has thickened. Remove and allow to cool for 10 minutes. Top with the remaining 1/3 cup creme fraiche and serve immediately.
