Preheat the oven to 375 degrees Fahrenheit. Grease a roughly 9 x 13-inch casserole pan and set it aside. Prepare the pasta according to the directions on the package. Strain, rinse with cold water so it doesn't overcook, then drizzle with the olive oil in a large bowl, toss to coat, and set aside.
In a medium bowl stir together the gruyere, parmesan, 1 cup of the white cheddar, and 1/2 cup of the smoked gouda. Set it aside.
In a medium saucepan, melt the butter over low heat. Add the flour and whisk until bubbly. Then add the milk, paprika, salt, pepper, and nutmeg. Increase the heat to medium low, and continue to cook for 5-10 minutes or until the mixture is hot but not boiling.
Reduce heat to low and add half the sour cream and half the gruyere cheese mixture, whisking until smooth. Then add the remaining half of the sour cream and the gruyere mixture and whisk until smooth and creamy.
Pour the melted cheese over the bowl of cooled pasta and toss to coat. Empty into the greased casserole dish and spread into an even layer.
Sprinkle the remaining 1 cup of smoked gouda and 1/2 cup of white cheddar onto the top of the macaroni and cheese and bake in the oven until the top of the macaroni is just turning golden, about 20 to 30 minutes. Remove from the oven and serve immediately.
