2 ½poundsboneless skinless chicken thighs
1 ⅔poundstomatoes
1large red onionor two small red onions, cut into sixths
2heads of garlictop ¼ of the head cut off and removed
3cupscooked ricefarro, or quinoa to serve alongside
Instructions
Preheat the oven to 375 degrees Fahrenheit. Mix the seasonings together in a small bowl and set them aside. Toss the chicken with 1 tablespoon of the olive oil and half of the spice mixture in a roughly 9 x 13-inch baking dish.
Cut any large juicy tomato into quarters, romas can be cut vertically in half, and small tomatoes can be left whole. Toss them with 1 tablespoon of the olive oil and half the remaining spice mixture and add them to the pan with the chicken.
Nestle the onion wedges and the garlic heads into the pan, cut side facing up. Brush the onions and exposed heads with the remaining olive oil, then sprinkle the whole pan with the remaining spice mix.
Place the pan in the oven and bake until a thermometer inserted into the thickest chicken thigh reaches 165 degrees Fahrenheit, about 35 to 45 minutes.
