Ingredients

Spiced Pear Bundt Cake

  • 3 cups flour
  • 2 teaspoons cinnamon
  • 1/2 teaspon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup plus 6 tablespoons butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 3 pears peeled cored, and diced

Candied Pear

  • 1 cup simple syrup cooled to room temperature
  • 1 pear
  • 1/2 cup superfine baker's sugar

Brandy Vanilla Glaze

  • 2 cups powdered sugar
  • 2 tablespoons brandy
  • 1 teaspoon vanilla extract
  • 1 tablespoon plus 1 teaspoon milk

Instructions

  1. In a large bowl mix together the flour, cinnamon, nutmeg, cloves, salt, and baking soda. Mix until blended, then set aside.
  2. Preheat the oven to 350 degrees Fahrenheit. In the bowl of an electric mixer fitted with a paddle attachment, cream together the butter and sugar at medium speed until smooth.
  3. Add the eggs, milk, and vanilla extract and mix until smooth. Slowly add the flour mixture and mix until just incorporated. Stir in the diced pears and pour into a well-greased and lightly floured bundt pan. Place in oven and bake to 1 hour and 5 minutes to 1 hour and 15 minutes. Remove and allow to cool until warm before flipping the pan onto a wire rack to remove the cake and cool completely.
  4. To make the candied pear, brush the pear with the simple syrup and sprinkle with the superfine sugar. Once coated, place on a wire rack to dry.
  5. Now you can make the glaze. Whisk together all of the ingredients until smooth. Drizzle over the cooled bundt cake, top with the candied pear, and serve.
